We just love this recipe at our house. I will attach the link for the original recipe below. Most of the time, I replace the Southwestern corn with a can of whole corn (I use sweet corn) and a can of black beans. Here is my recipe.
1/2 box of Rotini Noodles (I'm only feeding 3 so if your family is large, adjust it). We always have a lot of leftovers though so I'm guessing this will feed 6 people if they aren't all adults.
1 jar of spaghetti sauce (any flavor you like)
1 can of whole corn, drained
1 can of black beans (drained and rinsed)
Season with salt, pepper and garlic powder.
1 lb ground beef (or ground turkey if you prefer)
Shredded Cheddar cheese
Cook noodles in a large pan. Drain.
Cook ground beef in skillet until done. Drain and return to skillet. Then add spaghetti sauce, corn and beans. Season taste. I usually do this while the noodles are cooking. When noodles are cooked and drained, add them to the meat mixture. Top with shredded cheese. ENJOY!!!
