I'm sure I'm not the only one that has done this. :) I look at some recipes to try to figure out what to cook, walk to the pantry, fridge, etc and realize I'm missing an ingredient or two for every recipe I can come up with. So, tonight, I improvised. I took some ingredients for one and mixed it with ingredients of another recipe. Here's what I did. I hope you enjoy it. We did! It was yummy!!!
Ingredients:
Kraft Philadelphia Cooking Cream Santa Fe Blend (1st time trying this)
Bowtie Noodles (about 8 oz)
2 large chicken breasts
colby/monterey jack shredded cheese (however much you like)
Rotel Mild
I was in a hurry so I cooked my chicken in my Pampered Chef Deep Dish Baker in the microwave. You could bake it or boil it, or cook it on the stove. Doesn't matter. Dice or shred chicken.
While chicken is cooking, cook noodles according to package.
Once the chicken is done, place it in a medium to large skillet, along with the Cooking Cream and Rotel. Stir. I didn't drain the Rotel but I think I will next time.
Cook until hot and mixture is thick. Add noodles and stir. Top with shredded cheese.
